Sous Chef – EU Work Eligible

About the role

The Grand Hotel Kempinski Riga is seeking a motivated Sous Chef who can support the Head Chef in delivering high‑quality, creative cuisine while ensuring strict food safety and hygiene standards. This hands‑on position requires a keen eye for detail, strong organisational skills, and the ability to work effectively in a fast‑paced, luxury hotel environment.

Key responsibilities

• Assist the Head Chef with daily food preparation, cooking, and immaculate plating according to the hotel’s menu and standards.
• Maintain comprehensive product knowledge, monitor trends, and recommend adjustments to kitchen operations.
• Support special events, promotions, and menu development, including inventory, ordering, and supply management.
• Oversee kitchen and stewarding staff, handling scheduling, training, and performance monitoring.
• Ensure equipment is well‑maintained and sanitation, health, and safety standards are consistently met.
• Participate in briefings, trainings, and adhere to all food‑and‑beverage safety policies.
• Perform other ad‑hoc duties as assigned.

Required profile

• Minimum 3 years of experience in a culinary role, preferably in a 5‑star hotel or upscale restaurant.
• Positive attitude, team‑player mindset, and ability to work independently under pressure.
• Strong organisational and time‑management abilities with a commitment to HACCP and hygiene standards.
• Self‑starter with a high sense of ownership and an eye for detail.
• Good command of English; Latvian is a plus.
• Eligibility to work in the EU (EU passport or valid Latvian work visa).
