Executive Chef – 5★ International Hotel

About the role

The Grand Hotel Kempinski Riga, a 5‑star international hotel, is seeking an Executive Chef to lead its kitchen and stewarding operations. The role focuses on delivering high‑quality culinary experiences while maintaining strict hygiene and safety standards.

Key responsibilities

• Oversee all kitchen and stewarding activities, ensuring compliance with hygiene and safety regulations.
• Maintain and update recipes, accurately cost dishes, and develop new menu items.
• Foster comprehensive product knowledge of ingredients, equipment, suppliers, and market trends.
• Create value‑for‑money menus in collaboration with the Food & Beverage Director.
• Train and manage kitchen staff, promoting positive employee relationships.
• Ensure adherence to local legislation, company policies, OH&S guidelines, and emergency procedures.
• Maintain up‑to‑date hotel policies and procedures files.

Required profile

• Minimum 5 years in a kitchen management role, preferably within an international 5‑star hotel chain.
• At least 10 years of overall kitchen experience.
• Gastronomic education (certificate, diploma, BA/BSc) and HACCP certification.
• Excellent oral and written English; additional languages are a plus.
• Strong knowledge of food safety regulations and ability to work in a multinational environment.
